You could technically visit Prishtina without eating at Metro. People have made worse decisions. It is one of the most inconspicuous places in the city centre, the sort of fast-food café you could walk past for years without realizing that half the people inside are regulars.

At the counter sits a lineup of what can only affectionately be described as “mush”: tuna, chicken curry, prosciutto and the famous chicken-corn mixture. Choose your filling, then choose toast or salad.

Our editorial position is firm: get the chicken-corn salad, which comes with a cold pasta so good that generations of customers have tried to get their hands on the secret recipe, fresh green salad, and Metro's famous toasted bread. From there, everyone develops a method: build little sandwiches and eat the pasta as a side, rotate clockwise between components, dip the bread. It's a build-your-own-adventure on a plate.

The menu has barely changed since Metro opened. We consider this a feature, not a flaw. Locals come in early for coffee, and come winter, the glassed-in terrace fills with smokers enjoying the rare luxury of smoking without losing feeling in their hands.

Just avoid lunch break (roughly 12 to 1:30), when half the city seems to remember the chicken-corn salad at once.
